Chicken Alfredo with Homemade Noodles

Ingredients

Alfredo Sauce

  • ½ cup butter
  • 2 cups heavy cream
  • 2 cloves of garlic minced
  • 3 cups freshly grated parmesan cheese
  • ½ cup fresh parsley chopped
  • 3 cups cooked chicken, diced

Homemade Noodles

Directions

Alfredo Sauce

  1. In a saucepan over medium heat, Sauté garlic.
  2. Add the heavy cream and cook for a few minutes until simmering.
  3. Next, add the cheese and stir until incorporated then remove from heat.
  4. Add the fresh parsley, cooked chicken and serve immediately on top of noodles.

Homemade Noodles

  1. In a bowl make a well with the flour. In the center add the oil, salt and eggs.
  2. With a fork, start by whisking the eggs and bringing the flour from the outside, in.
  3. Knead the dough for 10 minutes till it forms into a firm ball.
  4. Divide into 8 even pieces and place in the fridge to rest for 30 minutes.
  5. Take dough out and roll each piece into long “slabs” and put through the pasta attachments. *(You can even roll them out completely by hand and cut the pasta. Using an attachment helps it not be too thick and more uniform:)
